You Were Right

Too much cinnamon in the coffee.  It was a good idea, but I'll have to work on the proportions a bit.

I have no idea if you mean cinnamon added to already brewed coffee or cinnamon added before the brewing process. But just in case you don't know this trick, when you brew regular drip coffee, adding about a tablespoon of ground cinnamon to the grounds in the filter basket gives it a VERY mild cinnamon flavor, but more importantly combats some of the bitterness of automatic drip brewing and gives the whole pot a LOVELY mellow flavor.

If you meant sprinkling cinnamon on coffee afterward - yeah, you gotta be careful with that. :) Just a sprinkle will do ya.

In fact, I added far less than a tablespoon to freshly ground beans this morning. [livejournal.com profile] drangelo tried it before we left for work and said it was too strongly cinnamoned. (good word, eh?)

I don't usually drink any until I get to work. He was right. It was a good idea, but poorly executed.

To be more precise: When I've done this I've added about a tablespoon of ground cinnamon to grounds for a full 10-12 cup pot. So if you made less than that, yeah, it might be too much. I also don't mind that the coffee gets too cinnamoned. (I approve of your word.)

I actually learned this trick from the manager at Fuad's, a fancy restaurant in Houston where I worked for a while. I learned a LOT of neat tricks, and a lot about the restaurant business, from the man. He was a completely jerk to work for, but man, did he know his business. And the experience when you eat at that restaurant shows that.

WE make about an 8 cup pot (of a dark roast Sumatran with cocoa nibs - mmmm). I didn't measure, but I suspect that I put in about 1.5 tsps. I suppose we like it less cinnamoned. :)

Yeah, 1.5 tbsp. for 8 cups worth of grounds would give you most definitely CINNAMON coffee, and not just cutting the bitter and turning the coffee mellow coffee. But, then again, it sounds yummy to me. :)

And thanks for the reminder that with all of the lattes I've been making for myself, I should keep some ground cinnamon and/or nutmeg on the counter for those. Mmmm....

I just reread this and noticed that you misread my tsp measurement as tbs. It was only 1.5 tsp in 8 cups. I haven't tried it again with less cinnamon, as I've been away on business, but I may this week.

Taste of Texas serves a cinnamon coffee with your bill. It involves stick cinnamon (and brown sugar, I believe)--I have the recipe card at home--remind me and I'll find it.
